Dough
3 1/4 cups bread flour
1 1/4 cups water
1 packet or 2 1/4 tsp yeast
1/2 tsp sugar
1/4 tsp sugar
Garlic Chili Oil
4 Tbsp olive oil
1 Tbsp Chili Flakes
2 cloves garlic, sliced thinly
Toppings
6 oz fresh mozzarella
10-12 basil leaves, whole or chopped
Balsamic Glaze
Stand Mixer
Grill
Bloom yeast with water and sugar. Add flour and salt to bowl of stand mixer, then add yeast/water mixture and mix on low until combined. Turn mixer to 6 and knead for 5 minutes.
Place in oiled bowl and let rise until doubled. Once doubled, punch down dough and fold over itself 4 times.
Let rise again, punch and fold, and let rise a third time.
When dough is bubbly, airy and doubled again, turn grill on and bring temperature to 500 degrees.
Split dough into 2 and lightly press into a circle 1/2-3/4 inches thick.
Place over direct heat and grill 2-3 minutes with lid closed. Flip and brush with garlic chili oil on cooked side. Close grill again and cooke for 2-3 more minutes. Add mozzarella, then close again until melted, 1-2 minutes.
Remove from grill to plate, add basil and drizzle with balsamic glaze.
Yield: 2 eight inch flatbreads
Oven: ~500°
Bake Time: 6-7 minutes

You've probably noticed that I've been grilling. A lot.
This summer has been HOT, and I hate using the oven when it's hot enough out that the AC is on, so I grill as much as possible. But in addition to that, it's been quarantine. That means spending time outside to enjoy the fact that we won't be able to escape the house in just a few short months... But it's also the only way to see anyone and be able to distance. This means we really grilled a lot.
So recently I decided I wanted to make an app for a last minute outdoor meet-up, and I've also been experimenting (read: obsessed) with a new bread recipe that is perfect and airy and delicious every time.
But I hadn't made it directly on the grill yet, just in a skillet.
I decided it was the thing I needed to try. The basil plant had shot up and needed a prune, and I even had a new, massive package of fresh mozzarella from Costco. Add chili oil for some heat and balsamic for some sweet and it was so. delicious. It probably could have just been dinner, but we didn't let that stop us!
The best part? It made two perfect 2 person portions, so we could easily split the end result without worry.
