Once upon a time, I made Eric monster cookies.... And we lived happily ever after!
I'm only kind of kidding.
Of all the things I make, these monster cookies have to be in his top 3 favorites.
I invite you to make them for the special people in your life and see just how much they love them too!
Beat together softened butter and peanut butter until combined, then add sugar and beat on medium (4-6) until fluffy and a significantly lighter color, about 5-6 minutes.
Turn mixer to low and add eggs, 1 at a time until incorporated if making more than one batch. Then add vanilla and mix until incorporated.
Add all dry ingredients and then mix in still on low. Scrape sides and bottom with spatula to ensure all flour has been incorporated.
Mix in oats, chocolate chips and M&Ms by hand.
Refrigerate dough for 30-45 minutes.
Preheat oven and scoop cookies onto baking sheets covered with parchment paper and lightly sprayed with oil.
Bake for 11-15 minutes depending on cookie size and desired doneness.
Remember that for chewier cookies, remove when they look slightly underdone as the cookies will continue to cook on the pan after removed from the oven.
