4 oz Goat Cheese
4 springs or 2 tsp thyme leaves
Zest of 1 lemon
1/4 - 1/2 tsp Salt (to taste)
1/4 tsp Pepper
Microplane
Let goat cheese warm to room temperature so it can be mixed.
Remove thyme leaves from stems and add to goat cheese along with zest from 1 lemon. Add salt and pepper and mix.
Taste and adjust seasoning as needed.

As with all things I've been making lately (or so it seems), this goat cheese spread came from a mix of things I have around and just need to use.
We're getting towards the end of the growing season, and mother nature decided to give us a little taste last week with a night that dipped into the 30s. In the first week of September. Anyway, the cold snap made me realize that it's about time to figure out ways to use up all of the herbs (rosemary, basil, sage, and two kinds of thyme) that have been growing outside my kitchen window all summer. The basil gets the most use, for sure, but it just finally really took root and got huge in the last couple of weeks, so now there's going to be a ton to use up! More on options for that to come, I'm sure...
On top of all the herbs, we got a Costco membership recently and of course I had to take advantage of the fact that they sell 2 packs of 10 oz goat cheese logs for less than the price of an 8oz one at the regular grocery store, despite the fact that there are only 2 of us... But we really like goat cheese so I decided it was worth it.
So I grabbed a few thyme sprigs and started pulling of the leaves, mixing in until I could see the thyme well distributed. I started with half the lemon zest, but when I tasted it I could barely taste lemon and added the rest - that's the best way to decide how much of something to add. You can use the recipe as a guideline but ideally you can taste it along the way and make exactly what you like!
We enjoyed this with some delicious sourdough made by a good friend of ours - highly recommended with something toasty and warm!
This would also be delicious as part of a charcuterie board, with crackers, on a mashed potato.... Or just eaten with a spoon!
