2 Roma Tomatoes or 1/2 beefsteak tomato per person
4 cloves garlic (more or less to taste!)
1 Large red onion
1 Lime
1 Tbsp Olive Oil
3 Tbsp Cilantro, chopped
4 oz Feta Cheese
Salt
Pepper
Veggie Grill Basket
Aluminum Foil
Cut tomatoes and onion into 1 inch pieces.
Smash and then thinly slice (not dice!) the garlic, we want larger pieces.
Line grill basket with aluminum foil, and spray or coat with oil.
Add tomatoes, onion and garlic to lined grill basket, then toss with olive oil, salt, and pepper. After tossing, squeeze over the juice of one lime.
Grill on medium-high heat for for 15-20 minutes, until the edges of the tomatoes and onions are browning or charring.
Remove from grill to a bowl, and squeeze over the other half lime and toss with cilantro and feta.
