Grapefruit Rosemary Simple Syrup
Zest and juice from 1 Grapefruit
3 sprigs rosemary
3/4 cup water
1 cup sugar
Cocktail
3 oz vodka or gin
1.5 oz simple syrup
8 oz soda
Lime wedge
Nonstick sauce pan, 1-3 qts
Cocktail
Add liquor and syrup to a glass with ice, squeeze the lime and drop in, then stir.
Top with soda, garnish with extra sprigs of rosemary if you’re feeling fancy!
Optionally you can also make it a mule with ginger beer instead of club soda – give it a shot and see which one you like better!

Syrup
Zest the grapefruit and add to pan.
Juice the grapefruit into a measuring cup, then add it to the pan with an equal amount of water. It should be about 3/4 cup.
Add sugar and stir.
If you had to adjust the amounts of water above, use about 2/3 the amount of sugar by volume as the total amount of liquid.
So if you ended up with 1/2 cup of grapefruit juice, add 1/2 cup of water and 2/3 cup sugar. If you ended up with 1 cup juice and 1 cup water, you would add 1 cup and 5 tablespoons of sugar (because there's 16 tablespoons in a cup, it's an easier measure to break down for weird numbers).
Add the sprigs of rosemary (no need to remove the leaves from the stem) and stir, then turn on the heat to medium high. Bring to a boil and then reduce low and simmer for 30 minutes.
Cool and then strain through a mesh strainer.
