1 cup All Purpose Flour
1 egg
1 tsp salt
8-10 oz beer (light)
1 lb cheese curds (any kind work)
2 qts frying oil of choice (I like vegetable or canola oil)
Dutch oven or other frying vessel
Spider Strainer

Remove cheese curds from fridge 25-30 minutes before frying and heat oil to 350°.
Mix all breading ingredients in a medium bowl, adding more beer as needed to achieve a thin (but not runny) batter consistency.
Add cheese curds to batter and toss until coated. Drain with fork or strainer, then add to oil. This can be done in batches, depending on the size of your pan. If the pan is crowded they may stick together.
Fry until golden (3-5 minutes) and remove to cooling rack to drain.
Serve while warm!
