Sour Cherry Syrup
1 lb cherries (sour)
1 cup water
3/4 cup brown sugar
Zest strips from 1 lime
Zest strips from 1/2 orange (optional)
Nonstick saucepan
Measure all ingredients into nonstick sauce pan, bring to boil and then simmer for 40 minutes.
Strain with a fine mesh sieve, using a spatula or spoon to mash softened cherries until pits are separated and no more juice is coming out. Some will be thicker, that's good! That's what you see in the bottom of the glass to the left.
Cool and store in fridge for up to a week.
Yield: ~2 cups syrup.
